“Chef” Jeff (and Amy’s) Favorite Poppy Seed Chicken


3 cooked chicken breasts

1 can cream of chicken soup (not the light version)

1 (8 ounce) container sour cream

3 tablespoons poppy seeds

1 sleeve Ritz crackers, roughly crushed & crumbled

½ – 1 stick butter, sliced

Hot cooked jasmine rice

  1. In a mixing bowl, shred chicken breasts with 2 forks. Add cream of chicken soup, sour cream, and poppy seeds and mix well until thoroughly combined.
  2. Grease an 11 x 7 baking dish with nonstick cooking spray or butter. Spread chicken mixture into dish and sprinkle crushed Ritz crackers evenly on top.
  3. Lay butter slices evenly on top of crackers and bake at 350 until bubbling hot and the crackers are toasted & crispy brown.
  4. Serve over hot jasmine rice.
